Chevre chaud ( Goat cheese in puff pastry )


Preparation: 20 min
Cooking: 15 min


Ingrédients (serves 4):

- 1 goat cheese (5 oz), Bucheron type (cylindric shaped)
- 1 puff pastry
- 1 egg
- basil


Directions:

Cut the cheese in 8 equal slices.

Using a glass, make 16 disks in the puff pastry. Set each slice of cheese on a disk of puff pastry, sprinkle the basilic and cover with the remaining puff pastry. (you can add honey on top of the cheese if you want to  have a mix salted/sweet)

Seal firmly the small pies. Coat the top with the egg yolk before putting them in the oven (15 min at 410°F).

Goes very well with a green salad and glass of white wine

Clafoutis aux cerises


Ingredients (for 6 pers):
- 5 eggs
- 1 pinch salt
- 130 g (5.29109  oz) of powdered sugar + 1 teaspoon
- 80 g (2.82191  oz) flour
- 60 g (2.11643  oz)  butter + 1 teaspoon butter + enough to mold
- 30 cl milk
- 300/500 g (17.6369 oz) of cherries
- Optional: 1 packet of vanilla sugar

 Preheat your oven at gas mark 6 (180 ° C - 356 ºF).
Beat the egg omelette. Add salt, sugar and mix well. The mixture should be fluffy. Add the melted butter, then flour, then dilute it with milk.

Wash and hull the cherries and brown them during 3 -5 min in a pan over low heat with the teaspoon of sugar and butter.

Place the cherries in a well buttered baking dish (earthenware, porcelain ...).

Pour the paste on the cherries and bake in a moderate oven (gas mark 6 / 180 ° C/ 356 ºF) for 25 min. Serve lukewarm.

French Hachi Parmentier

Ingredients (for 4 pers):
- 2 onions
- 2 garlic cloves
- butter
- 2 little tomatoes
- 400 g (0.881849 lb or 14.10 oz) minced meat
- flour
- Salt and pepper
- Herbes de provence
- 1 egg yolk
- Parmesan
- mashed potatoes
- Grated cheese

preparation:

Fry the chopped onions and garlic mixed with a good piece of butter. Add the diced tomatoes, ground meat, 1 tablespoon flour, salt, pepper, herbs de provence. When everything is cooked, turn off the heat and add the egg yolk and a little parmesan. Mix well. Spread the mix in the dish bottom.

Prepare the mashed potatoes. Spread over the meat. On top of the mashed potatoes sprinkle with grated cheese and bake to brown like in the picture above (oven around 200°C or 392°F).

Apples Crumble


Ingredients (for 6 pers):
- 3 big apples (or 3 big ears )
- 150 g (5.29 ounce or 0.331 pound) flour
- 75 g  (2.65 ounce or 0.165pound) butter
- 120 g (4.41 ounce or 0.265 pound ) sugar

Preparation:

Cut apples into cubes.

In a bowl, mix  the flour, sugar and butter. Mix the all with fingers until dough is sandy.

Butter the a big pan (or 6 small pans), arrange sliced ​​apples (or pears) and place dough on top.

Cook for 25 minutes at gas mark 6 (180°C or 359 °F).

A Classic DESSERT : MOUSSE AU CHOCOLAT


Ingredients ( 4 pers ):
- 3 eggs
- 100 g  (3.527oz = 0.2204 pounds) chocolate (dark or milk)
- 1 packet of vanilla sugar (7.5 g = 0.265 oz = 0.0165 pounds)

Preparation:

Soften the chocolate in a bowl.

pour the egg yolks and sugar in the bowl

Then, beat the egg whites until stiff and gently fold the mixture using a spatula.

Refrigerate 1 hour or 2 minimum.

DESSERT : Gateau moelleux au chocolat (VERY EASY AND VERY GOOD)

French Molten Chocolate Cake Recipe

  Ingredients (for  6 pers):
- 125 g  (4.40924 oz) flour
- 125 g 4.40924 oz) butter
- 250 g (8.81849 oz) sugar
- 1 chocolate bar (about 200 g or 7.05479 oz)
- 4 eggs
- 1 / 2 packet of  baking powder


 Preparation:

Preheat oven to 180 ° C (gas mark 6- 356 ºF).

Melt the chocolate in a saucepan with a little water.
Off the heat, add butter, flour and the baking powder.

Prepare a foam with egg yolk, sugar and a little water and add to the chocolate mixture.

Beaten eggs whites and incorporate them into the pan gently.

Pour into a buttered cake pan with high edges, and bake for about 35 minutes.


You can add more sugar or melted chocolate to decorate top of cake.

A starter: cake aux olives et jambon (cake salted with Olives and ham)


Ingredients (for 6 pers):
- 150 g (5.291oz  or 0.33 lb)  flour
- 200 g ( 7.0547 z   or 0.4409 lb)  ham
- 150 g (5.291oz or 0.33 lb)  pitted green olives
- 75 g  (2.645oz or 0.165 lb) grated cheese
- 4 eggs
- 10 cl (3.381oz or 0.21133 pt) milk
- 1 teaspoon baking powder
- 1 tablespoon oil

Preparation:

Cut olives into slices. Cut the ham into pieces.
Pour the eggs into the flour and mix. Add milk and oil and mix. Add ham, olives and cheese and mix. Add the teaspoon of baking powder and for the last time mix.

Put all in a buttered cake pan and place the pan in a hot oven at gas mark 6 (180C or 356 Fahrenheit) for 45 min.

As a starter you can eat a slice of cake with some salad.

Do you feel like cooking fish, the recipe is called: (salmon) Saumon with mozzarella

(in this picture above, we don't see the salmon but it's under the mozzarella)
Ingredients (for 2 persons):
- 2 salmon steaks
- 1 ball of mozzarella
- 2 tomatoes
- Mixed Herbs (in French: herbe de Provence) , basil
- Salt and pepper
- olive oil
- 2 black olives
- 2 cloves garlic (not too big)

Preparation:

Place each salmon fillet on a separate sheet of aluminum.

Cut tomatoes and mozzarella into thin slices.

Salt and pepper the salmon steaks.

Arrange salmon and put on top of each in turn: 1 slice tomato and 1 slice of mozzarella and 1 slice tomato, etc..

Slice the olives and garlic, sprinkle the 2 salmon steaks, add a little salt, pepper, and sprinkle with herbs.

Pour over each salmon steaks the equivalent of 2 teaspoons of olive oil.

Close each aluminum foil, and arrange in a baking dish.

Put in hot oven (210 ° C / mark 7) for 35 min, the salmon is cooked when his skin is much clearer.

Serve with basmati rice and green salad.

A Classic of The French cuisine: Boeuf Bourguignon

This version is for the bussy people who doesn't have to much time to cook


Ingredients (serves 6 people):
- 800 g (28.22oz  or 1.764 pounds) of beef bourguignon
- 100 g  (3.527oz or 0.22 pounds) of bacon
- 50 g (1.764oz or 3.527 tbsp) butter and 3 tablespoons oil
- 2 / 3 of a liter (0.176 galon) of red wine
- 2 onions
- Garlic
- 2 tablespoons of flour
- 1 bouquet garni (or mixed herbs in french: herbes de province)
- Salt and pepper
- 250 g (8.818oz or 0.551 pounds) of Paris mushrooms (in canned or fresh)

Preparation (15- 20 min): 



 In a pressure cooker, brown the meat and make the bacon in the oil or butter.
Add the onions cut into small pieces.
Add can of mushrooms.
Sprinkle with flour (2 tablespoons).
Mix.
Allow to brown for a moment.
Add the red wine that should cover the meat.
Add salt and pepper.
Add garlic and bouquet garni (or mixed herbs).
Close the pressure cooker.

Cooking time : 60 min

 let's cook at low heat during 60 min and rotate time to time
The boeuf bourguignon could be serve with rice , potatoes or carrots.

First recipe a very Easy dessert : Mousse légère à la Mangue

This is a very nice dessert during the summer or spring

Ingredients (for 2 persons):
- 1 large ripe mango
- 100 ml coconut milk

Preparation:

Peel mango and cut into small pieces.

Mix with the coconut milk.

Pour the mix into two dessert cups and place the cups in the refrigerate (or freezer if you like it very fresh) at least 1 hour.
